The Sorting Ritual: Mama’s Cozy White Bean Stew

Long before the rich, garlicky aroma of this Moroccan white bean stew fills the house, the ritual begins.
In Morocco, making authentic Loubia starts with a familiar, comforting sight: mothers and grandmothers sitting together with a large, flat tray resting across their laps. They spread out the dry white beans, their hands moving in a rhythmic, sweeping motion as they carefully search for “culprits”, tiny stones or imperfect beans, to toss aside. It is a quiet, beautiful moment of preparation before the cooking even begins.

That level of care and tradition is what makes this authentic Moroccan white bean stew the ultimate comfort food. Because it relies entirely on a rich tomato broth, grated garlic, and earthy cumin, it is a naturally vegan Moroccan bean stew that feels deeply savory and velvety. It is famously a winter warmer, designed to melt away the chill on a cold day. But honestly? This is one of my absolute favorite meals in the world, so I refuse to give it up in the summer! I just have to sit there patiently, watching the steam rise, waiting for it to cool down to “just warm” before I can finally scoop it up.

The best part about this Authentic Moroccan Loubia recipe is how incredibly effortless it is. If you have been wondering how to make an actually easy Moroccan white bean stew, forget sautéing onions or blooming spices in stages, this is a true 1-pot miracle. Because white beans are globally recognized as a top plant-based protein source for heart health, this dish is as nourishing as it is convenient. Once your beans are soaked overnight, literally every single ingredient goes into the pressure cooker at the exact same time.

Grab some warm Batbout or crusty pan bread to soak up the sauce, and come cook this family classic with us! (And a little secret between you and me: try sprinkling a tiny bit of extra smoked paprika on your plate right before you eat, it is a recent discovery of mine(Noor) and it is a game-changer!).

Why You’ll Love Mama’s Authentic Moroccan Loubia

The Ultimate 1-Pot Miracle: Unlike other recipes that make you sauté onions or bloom spices in tedious stages, this authentic Moroccan white bean stew is effortlessly practical. Once your beans are soaked and sorted, literally every single ingredient, the oil, spices, herbs, and beans goes into the pressure cooker at the exact same time. It is the definition of “dump and cook” comfort!
Mama’s Velvety Shortcut: While some traditional versions require grating fresh tomatoes, Mama’s brilliant shortcut relies entirely on rich tomato paste. This authentically Moroccan trick saves you so much prep time and guarantees a consistently thick, deeply savory, and vibrant red broth every single time you make it.
Naturally Vegan Comfort: Because it gets its rich, velvety texture entirely from the starches of the beans mixed with generous amounts of olive oil and grated garlic, this is a naturally vegan Moroccan bean stew. It is a hearty, protein-packed bowl of warmth designed to melt away the winter chill.
That Secret Smoky Finish: We use a beautiful traditional blend of ginger, turmeric, and cumin to build the earthy base, but the real star here is the smoked paprika. Adding this special ingredient (and maybe an extra little sprinkle on your plate right before eating!) adds an incredible, smoky depth to the beans that makes this family recipe completely unforgettable.

Step 4: The Texture Test and Simmer

After 30 minutes, turn off the heat, safely release the pressure, and open the cooker to test a bean by pressing it it should crush easily with minimal effort. If the beans need a tiny bit more time or if you want the sauce to be a little thicker, leave the lid off and let your Authentic Moroccan Loubia simmer on medium-low heat for 5 to 10 minutes. During this open simmer, follow Mama’s strict rule to gently stir the stew every 2-3 minutes so the starchy sauce doesn’t burn or stick to the bottom.

Step 5: Serve and Enjoy

Serve this deeply comforting vegan Moroccan bean stew piping hot, though if you are making this in the summer, you might want to let it cool down to just warm before diving in! It pairs perfectly with freshly baked crusty bread or warm Moroccan batbout to scoop up that rich, velvety sauce. For a special flavor boost, try sprinkling a little extra smoked paprika directly into your bowl and stirring it through right before eating your hearty Moroccan white bean stew.

Ingredients Notes 🧂

Cooking Tips 🍳

  • The Open Simmer: If your 30 minutes are up and your sauce feels a bit too watery, let the pot simmer uncovered for 5 to 10 minutes. Just remember Mama’s strict rule: you must stir gently every 2-3 minutes during this phase so those starches don’t scorch on the bottom of the pan!

Serving Tips 🍽️

  • My Final Flavor Boost: Before diving in, I love to sprinkle a tiny bit of extra smoked paprika powder directly into my plate and stir it into the sauce. It is a fantastic flavor combination that I discovered recently, and it looks beautiful on the table!

Ingredients

  • 500 g White Beans (1.1 lbs about 2 ½ cups) Must be sorted and soaked overnight. (Forgot to soak? Check the FAQ above for the 1-hour trick!)
  • 1.7 Liters Water (7 ¼ cups) (Boiling the water first is our ultimate time-saving hack!)
  • 150 ml Olive Oil (⅔ cup Crucial for the velvety texture)
  • 1 Medium Onion (grated or very finely chopped)
  • 5 Cloves Fresh Garlic (grated or crushed)
  • 4 Tbsp Fresh Cilantro and Parsley (finely chopped)
  • 1 ½ Tbsp Tomato Paste (Read Mama's Notes above to see why we use this instead of fresh grated tomatoes!)
  • 1 ½ tsp Salt (adjust to taste)
  • 1 tsp Ginger Powder (generously full)
  • 1 tsp Turmeric Powder
  • 1 tsp Paprika
  • 1 tsp Smoked Paprika (generously full tsp, Our secret flavor booster!)
  • 1/2 tsp Black Pepper
  • 1/2 tsp Cumin

Equipment

  • 1 Pressure Cooker This is the traditional, fast way to make it! (Alternative: A heavy-bottomed Dutch oven or soup pot).
  • 1 Large Mixing Bowl For soaking the beans overnight.
  • 1 Electric Kettle (Optional) Mama's trick to boil the 1.7 Liters of water before adding it to the cooker drastically cuts down the prep time!

Method

  1. Sort and Soak: Spread the dry white beans on a flat tray to remove any debris, then rinse thoroughly. Place them in a large bowl, cover generously with cold water, and soak overnight (or for at least 8 hours). (Forgot to soak them overnight? Check the Frequently Asked Questions section above for Mama's 1-hour "quick soak" emergency trick!)
  2. The One-Pot Assembly: Transfer the soaked, rinsed beans to your pressure cooker. Add the 1.7 Liters of water, grated onion, crushed garlic, mixed herbs, tomato paste, olive oil, and all of the spices. There is no need to sauté! (Be sure to read the "Mama's Tips & Notes: Cooking Tips" section above to see why boiling your water in a kettle first is our ultimate time-saving hack!).
  3. Pressure Cook: Secure the lid of the pressure cooker and place it on medium heat. Cook on low pressure for exactly 30 minutes.
  4. Simmer and Thicken: Turn off the heat and safely release the pressure. Test a bean to ensure it is meltingly tender. If you want the sauce to be a bit thicker, simmer the stew uncovered on medium-low heat for 5 to 10 minutes. Stir gently every 2-3 minutes so it doesn't burn.
  5. Serve: Serve piping hot with crusty bread or warm Batbout(Moroccan flat pan-bread). (Head up to the "Mama's Tips & Notes: Serving Tips" section in the post above to discover my secret smoked paprika flavor twist, and how we serve this when it's hot out during the summer!)

Notes

  • No Pressure Cooker? You can easily make this Authentic Moroccan Loubia in a standard heavy-bottomed pot or Dutch oven! Check the Frequently Asked Questions section in the post above for the exact stovetop times and simmering instructions.
  • Storage & Reheating: Loubia tastes even better the next day! Store leftovers in an airtight container in the fridge for up to 4 days. (Read the FAQ section above for Mama’s trick on how to bring back that silky texture when reheating without turning the beans into mush).
  • Meat Variation: This recipe is written as a deeply comforting vegan Moroccan bean stew. However, if you’d like to add beef or lamb, head up to the FAQ section to see exactly when and how to drop the meat into the pot for the best flavor!
