Authentic Moroccan Loubia

Experience the ultimate Moroccan comfort food with Mama's authentic Loubia! This hearty, vegan white bean stew is incredibly easy to make in just one pot. Packed with rich tomato broth, garlic, and earthy smoked paprika, it is the perfect budget-friendly dinner to scoop up with warm crusty bread.

Ingredients
  

  • 500 g White Beans (1.1 lbs about 2 ½ cups) Must be sorted and soaked overnight. (Forgot to soak? Check the FAQ above for the 1-hour trick!)
  • 1.7 Liters Water (7 ¼ cups) (Boiling the water first is our ultimate time-saving hack!)
  • 150 ml Olive Oil (⅔ cup Crucial for the velvety texture)
  • 1 Medium Onion (grated or very finely chopped)
  • 5 Cloves Fresh Garlic (grated or crushed)
  • 4 Tbsp Fresh Cilantro and Parsley (finely chopped)
  • 1 ½ Tbsp Tomato Paste (Read Mama's Notes above to see why we use this instead of fresh grated tomatoes!)
  • 1 ½ tsp Salt (adjust to taste)
  • 1 tsp Ginger Powder (generously full)
  • 1 tsp Turmeric Powder
  • 1 tsp Paprika
  • 1 tsp Smoked Paprika (generously full tsp, Our secret flavor booster!)
  • 1/2 tsp Black Pepper
  • 1/2 tsp Cumin

Equipment

  • 1 Pressure Cooker This is the traditional, fast way to make it! (Alternative: A heavy-bottomed Dutch oven or soup pot).
  • 1 Large Mixing Bowl For soaking the beans overnight.
  • 1 Electric Kettle (Optional) Mama's trick to boil the 1.7 Liters of water before adding it to the cooker drastically cuts down the prep time!

Method
 

  1. Sort and Soak: Spread the dry white beans on a flat tray to remove any debris, then rinse thoroughly. Place them in a large bowl, cover generously with cold water, and soak overnight (or for at least 8 hours). (Forgot to soak them overnight? Check the Frequently Asked Questions section above for Mama's 1-hour "quick soak" emergency trick!)
  2. The One-Pot Assembly: Transfer the soaked, rinsed beans to your pressure cooker. Add the 1.7 Liters of water, grated onion, crushed garlic, mixed herbs, tomato paste, olive oil, and all of the spices. There is no need to sauté!   3. Pressure Cook: Secure the lid of the pressure cooker and place it on medium heat. Cook on low pressure for exactly 30 minutes.
  4. Simmer and Thicken: Turn off the heat and safely release the pressure. Test a bean to ensure it is meltingly tender. If you want the sauce to be a bit thicker, simmer the stew uncovered on medium-low heat for 5 to 10 minutes. Stir gently every 2-3 minutes so it doesn't burn.

Notes

  • No Pressure Cooker? You can easily make this Authentic Moroccan Loubia in a standard heavy-bottomed pot or Dutch oven! Check the Frequently Asked Questions section in the post above for the exact stovetop times and simmering instructions.
  • Storage & Reheating: Loubia tastes even better the next day! Store leftovers in an airtight container in the fridge for up to 4 days. (Read the FAQ section above for Mama's trick on how to bring back that silky texture when reheating without turning the beans into mush).
