Ultimate 30-Minute One-Pot Moroccan Lentils (Adass)

Ingredients
  

  • 1 ½ cups Lentils (approx. 300g)
  • ½ cup Olive Oil (approx. 100ml)
  • 1 medium Onion (grated)
  • 4 cloves Garlic (crushed)
  • 4 tbsp Fresh Herb Mix (parsley and coriander)
  • 1 tbsp Tomato Paste
  • 1 tsp Salt (adjust to taste)
  • 1 tsp Ginger Powder
  • 1 tsp Paprika
  • 1 tsp Curcuma (turmeric)
  • ½ tsp Black Pepper
  • ½ tsp Cumin (reserved for the end!)
  • 1.5 L Water (Note: You use 1 Liter for the pressure cook, and keep the remaining 0.5 L handy in case you need to adjust the thickness later).

Method
 

  1. Step 1: The Cleaning Ritual: Spread the 300g of lentils out on a flat surface to pick out any tiny stones or debris. Move them to a colander and rinse thoroughly under cold running water.
  2. Step 2: Prep the Aromatics: Grate the onion using the larger holes of a box grater so it melts into the sauce. Crush the 4 cloves of garlic to release their potent, signature oils.
  3. Step 3: The One-Pot Assembly: In your pressure cooker, add the lentils, 1 liter of water, the grated onion, crushed garlic, tomato paste, and the fresh herb mix. Pour in the 100ml of extra virgin olive oil and add all the spices except the cumin. Give everything a thorough stir.
  4. Step 4: The Pressure Cook: Seal the cooker firmly and place it on medium-low heat. Once the pressure cooker’s whistle starts to "sing," set your timer for exactly 25 minutes.
  5. Step 5: The Final Thickening Trick: After safely releasing the pressure and opening the lid, check the consistency. If you prefer a thicker, heartier stew, leave the lid open and simmer on a slightly higher heat for about 5 minutes until the sauce reduces and thickens to your liking.
  6. Step 6: The Finishing Touch: Turn off the heat and stir in the reserved ½ tsp of cumin (adding it now prevents it from turning bitter). Serve hot with crusty bread for dipping!

Notes

The Cumin Rule: Whatever you do, do not add the cumin before closing the pressure cooker! Cooking cumin under pressure makes it turn bitter. Read the "Tips and Notes" section in the blog post above to learn exactly why we save it for the final minute.
Nailing the Texture: Authentic Moroccan Adass is meant to be scooped up with crusty bread, so it shouldn't be as watery as a soup. Leftovers & Reheating: This stew tastes even better the next day! It will thicken up significantly in the fridge overnight, just add a splash of water to get that beautiful balanced texture back!
